Lemon Daisy Cake

I made this cake for my mother-in-law's birthday this weekend.  She is a petite woman who rarely has seconds on dessert, but after eating a slice of this cake, she picked up the knife and cut herself another slice!  It was too delicious to stop at just one piece!!!  It had three 8" layers of vanilla cake with lemon curd filling, frosted with lemon cream cheese frosting.  I wanted the decoration to be simple, elegant, and "spring-y", so I piped on a white border and topped it with a single daisy.  Beautiful and tasty!
